Ooey Gooey Fudge Muffins

We've got overnight company coming this weekend...and at least one of our guests is a die-hard chocoholic. So when I was trying to figure out what to make for breakfast, one recipe instantly popped into my head: chocolate fudge muffins!!! These are the most chocolately muffins I have ever tasted. Amazingly, they have no leavning in them whatsoever.

Ooey Gooey Fudge Muffins

2 squares unsweetened chocolate
1 cup butter
1 ¾ cups sugar
4 eggs
2 tsp. vanilla
1 ½ cups flour, sifted
Optional: ½ cup semi-sweet chocolate chips

Melt chocolate and butter in a saucepan. Mix in sugar, eggs and vanilla, stirring gently. Add flour and mix just until combined. If desired, fold in chocolate chips. Pour into greased muffin cups, or muffin tins with cupcake liners. Bake at 350 degrees for 20-25 minutes, or until toothpick inserted in center comes out clean.

Happy Baking!

  1. This looks like just the thing to hit the spot for a craving I had recently (and quite often)! However, I think I may have a sensitivity to eggs so I'm wondering what this recipe would be like with an egg substitute (I use flax seed meal). I'm guessing the muffins would not be as fluffy, but they would still have all the chocolate, sugar and vanilla - which is where all the good taste comes from, right?!

Thanks for sharing another awesome recipe! I love that you consider ahead of time to make something special your guest(s) would particularly enjoy. Now that's hospitality! =)
